The name Koku to Umami translates literally to “Richness and Savory Taste”. To achieve its intense flavor, the recipe incorporates 40% “Hojun Gouda”—a specialized, long-aged Gouda cheese produced in Hokkaido using proprietary lactic acid bacteria. The result is a smooth, firm wedge that carries the dense, amino-acid-rich savory notes of deeply ripened cheese, making it an excellent pairing for dry white wine, full-bodied red wine, or cold beer.
